“That’s All I Have To Say About That…”

Ahoy Matees!

Happy St. Pattie’s Day!

Before I show you my green breakfast. I’ll have to talk about a different color first.

Orange.

The color my face turned after letting that pumpkin puree facial (from yesterday’s post) sit on my face for too long. I mean, it looked great if I was going for a Jersey-Shore style tan…

I was worried my orange stained face would remain for an embarrassingly long period of time. But fortunately, after a nice sweaty hot yoga class, and a showa- the orange disappeared.

My face did feel great after that facial though. AAhhh, the refreshing powers of pumpkin. Just beware, if you don’t want an orange face… don’t leave it on for too long!

Now onto the green!

I felt the need to have a festive breakfast this morning!

Green Mint Cacao Nib Overnight Oats topped with almond butter and a little more cacao nibs!

1/2 cup rolled oats, 1 tbs chia seeds, 3/4 almond milk, 1/8 tsp peppermint extract, 1/2 mashed banana, little bit of maple syrup, 1 tbs cacao nibs (or chocolate chips), and a little bit of liquid chlorophyll to make the oats green! (got this idea from a commenter who said she puts chlorophyll in her smoothies!)

Here are some of my recent non breakfast eatins’:

Quinoa, peas, tomatos, red pepper.

Topped with some pumpkin and sunflower seeds and my favorite lemon-tahini dressing from Oh She Glows. SO good!

Baked sweet potato topped with lime juice and chili powder. Two eggs (with the perfect liquidy yolks!) A side of ketchup!

Spinach salad with red pepper, tomato, avocado, kalamata olives, egg whites, kelp noodles, and nutritional yeast.

With some of these crushed on top!

I really like these! Got them at whole foods. For a chip- they've got lots of protein and fiber! Always a plus in my book!

Quinoa flour crust pizza- topped with some tomato paste + Italian seasoning, Daiya vegan cheese, kalamata olives, and nutritional yeast. REAL good.

Spinach salad with tomato, yellow peppers, crushed nori seaweed sheet, and some egg whites. All drenched in the yummy lemon infused olive oil my mom sent to me in a care package! (She knows me too well)

There you have it!

Wishing you all a happy and safe St. Patrick’s Day Saturday!

Please Don’t Guinness and drive!
